Potato Wedges, Baked
FoFa says:
"I am going to give the basic recipe, but if you add about 3-4 Tablespoons of grated Parmesan cheese, you get some extra yum as well. I also prefer white potatoes, but regular russets work just the same. I've been meaning to try red."
Estimated Cooking Time: 45 minutes total
Ingredients
Potatoes – 2 to 3 (large)
Olive Oil – 4 tbsp
Corn Starch – 2 tbsp
Garlic cloves – 4
Ground Black Pepper – 1 tsp
Salt – as needed
Dried Mixed herbs – 1 tsp
Directions
Wash and scrub the potatoes remove any black spots.
Do not peel it.
Cut them into wedges.
Heat a pan with water and add the potato wedges and cook until they are half cooked (approx 5 – 7 mins).
Once cooked drain the excess water and set them aside and let it cool.
In a large bowl take olive oil, freshly crushed pepper powder, dried herbs, finely chopped garlic and salt.
Add the half-cooked potato wedges and toss so that it combines well.
Now add corn starch and mix.
Mix well gently, so that the potatoes get well coated with the mixture.
Don’t worry if it looks messy, because it will be.
Meanwhile pre-heat oven to 400 deg F or 200 deg C.
Line a baking tray with foil or parchment paper.
Lay the pieces on the tray without over lapping.
Bake it for 30 – 35 mins or until the potato wedges are crispy & golden brown.
