Hawaiian Chicken Salad

Estimated Cooking Time: 15-20 minutes
Breast meat from a large rotisserie or baked chicken chopped or pulled into bite size pieces
1/2-3/4 cup of light mayo
2 teaspoons of curry powder
1/4 chopped macadamia nuts
1/4 shredded coconut
1 small can of crushed pinapple drained
1 chopped green onion
Stir chicken together with mayo. Sprinkle curry powder over the top and stir in. (you can adjust mayo and curry powder according to your taste). Stir in macadamia nuts, coconut, pinapple, and onions. Eat now or chill in fridge to let flavors mingle.
