Ginger Beer (easy)
FoFa says:
"I love Ginger beer (stronger than Ginger Ale). So I searched the web looking for a recipe, since I was into home brewing regular beer at the time. I have used this for years to make small batches. I have some of those Grolsch flip top beer bottles PERFECT for making this. DO NOT leave out over 48 hours. I have NEVER had a bottle explode on me, and never want one to either.
This recipe make one 16 oz. bottle of Ginger beer, so adjust the recipe per required amount.
I don't have a juicer, so making ginger juice is not a real option for me. I usually just use the blender with the ginger, and a bit of the water to make a puree. Sure it makes your ginger beer with some "stuff" in it, but it give it that home made look! You can strain it in a fine mesh strainer or cheesecloth if you don't like that.
I have used beer yeast in this with good results, have never tried brewers yeast as I understand it gives a more yeasty taste.
I actually use a little more ginger than this calls for because I like the extra "bite" it gives."
1 ounce ginger juice (or 1 1/2 oz. grated ginger)
2 ounces fresh lemon juice, finely strained
3 ounces simple syrup
10 ounces warm water (should be 70-90 degrees F, not to hot to kill the yeast).
Red Star Premier Cuvee champagne yeast (beer and wine yeast work also, original recipe called for the champagne yeast).
Mix everything together.
Fill each bottle with 16 ounces of your mixture and add roughly 25 granules of champagne yeast.
Leave about 1 1/2 - 2 inchs of headroom (air space).
Seal the cap securely, shake well, and store for 48 hours - no more, no less - in a warm, dark place.
After 48 hours have passed, refrigerate immediately to halt the process and make sure you do not over pressure the bottles.
