"The salsa can be used on the chicken or by itself with corn chips."
Ingredients
Chicken
2 TBSP fresh minced cilantro
2 TBSP fresh lime juice
1 1/2 TBSP olive oil
4 (6 ounce) kinless, boneless chicken breast halves
1/4 tsp salt
cooking spray
Salsa
1 cup chopped tomatoes
2 TBSP chopped onion
2 tsp fresh lime juice
1/4 tsp salt
1/8 tsp fresh ground black pepper
2 avocados, peeled and cubed
Directions

Combine first 4 ingredients in large bowl, toss and let stand in the fridge to marinate for an hour. Remove chicken from marinade and discard everything but the chicken. (I did keep some whole cilantro leafs on the chicken) Sprinkle chicken with salt. Spray a pan with the cooking spray and have on med/high heat on the stove. Add chicken to the pan when the pan in hot and cook for 6 minutes on either side.

Combine tomato and next 4 ingredients in a bowl then add avocado. Stir gently.
Once chicken is cooked, served salsa over the chicken.
The salsa is really good with corn chips as well. I didn't think we would have enough salsa for the chicken once everyone tried it. LOL
