"This is Chef John Folse’s recipe & it is divine! Next I am going to try to add some cranberries! Orange Cranberry are one my favs!"
Ingredients
2 cups all-purpose flour
1/2 c sugar
1 tablespoon baking powder
1 large egg
1 cup plain yogurt or buttermilk
1/4 cup melted butter
1 teaspoon pure vanilla extract (I added an additional 1/2 tsp orange extract)
1/2 cup orange marmalade
3/4 cup of pecans, chopped coarsely
Directions
Preheat oven to 375° degrees. Grease 8 muffin cups. In a large bowl whisk together flour, sugar & baking powder. In a separate bowl combine egg, yogurt or buttermilk, butter, extract & pecans whisk until smooth.
Pour egg mixture into flour mixture and fold 2-3 times until moistened. Do not over-mix, mixture will be lumpy.
Spoon 1 heaping tablespoon of batter into each muffin cup. Using the back of a teaspoon, press a small dimple into batter. Place a rounded teaspoon of marmalade in the center of each muffin & top with 2 tablespoons of batter.
Bake at 375° for 25 to 30 minutes (or until golden). Cool 5 minutes prior to removing from oven. After removing, cool another 5 minutes at room temperature, then serve with softened butter and/or marmalade.
