"One of my most popular appetizers! Am always asked for the recipe. Great for Fall get-togethers!
Serves 12"
3 Tbls unsalted butter
3 tablespoons brown sugar
3 tablespoons apple vinegar
2 large onions sliced
2 Tbsp canola oil, divided
8 large (abut 9 inch) flour tortillas
1 lb. grated smoked Gouda cheese
Heat butter in skillet over medium low heat. Add sugar and vinegar; stir to dissolve. Add onions, cook stirring occasionally, 30-35 minutes, until softened.
Add tbsp oil in large skillet over medium heat. Place tortillas on clean work surface. Sprinkle cheese and onion over half of the tortilla. Cook until cheese begins to melt, about 1 minute. Turn with spatula and cook until lightly brown. Repeat adding oil as necessary with remaining tortillas. With pizza cutter divide each tortilla into 3 pieces. Serve hot.
Serve with corn and black bean salsa.
