Interview with Santiago Jimenez of Pink Shrimp Cafe - Kingwood

As part of our ongoing "Getting to Know Your Local Businesses" series, this week we sat down with Santiago Jimenez, owner of Pink Shrimp Cafe.

Tell us a bit about your business: What does your business offer, and how long have you been around?

I have a passion for cooking seafood, so it was only natural to open a seafood restaurant. Our family-owned restaurant opened on Thanksgiving 2019. We offer a casual, counter-service style restaurant where local families can relax and enjoy a great meal at an affordable price.

How did you decide to get involved in this line of work?

After a long career in the seafood restaurant industry, I wanted to open a restaurant that is friendly and inviting to larger families such as mine. With the support of my wife and four children, it became possible.

Tell us a couple things that you are proud of your business. What are you known for? What separates you from the competition?

I’m very proud of the quality of the great tasting seafood that we serve. Many people have even posted their experience at Pink Shrimp on their personal Facebook pages and on NextDoor! So far, people have really enjoyed the fried seafood, especially the fried shrimp and catfish, and the shrimp and Mahi Mahi tacos that are actually served on Pink tortillas!

I’m also very proud of the progress my staff has made in just a short amount of time. I believe that the attention we pay to the little things really sets us apart from other smaller seafood restaurants.

What is your favorite part of running this business?

I love having the freedom to change up my menu. If I see something that is not quite working or I decide to add something new to the menu, I can immediately make the changes. It's that easy. I can also change up the recipe or cooking procedures to make a better product.

Who is your ideal customer/client? Who do you serve best?

Anybody with an appetite for great tasting food! Most likely, I serve something here that they will love. I serve all of our customers the best. I make them delicious food, served by our friendly staff, and offer them an inviting, clean environment to enjoy it while listening to the best music flowing from our speakers.

Is there any other information you'd like your potential customers/clients to know about your business?

We do welcome first responders to our restaurant. We offer 30% off meals to uniformed police, firefighters, and paramedics.

How do you see your business growing and improving over the next couple of years?
