4 whole chickens cut up (10 pounds), 4 entire celery stalks, 10 bell peppers, 3 lbs onions, 5 bunches parsley, half gall of chopped green onions, 4 tble spoons garlic, 8 packs beef and aundouille sausage (7 pounds, 8 bay leaves, 4 bags okra frozen, misc seasonings.....WHEW, just got done, nice flavor, now its on low simmer for the next few hours....Lot of work but always worth it....will freeze a lot after it cools......gonna be a busy evening....roux was 2,5 cups flour and 2.5 cups olive oil...water to fill (about 3 gallons with chicken bullion added)Browned all the chicken in the oven first, and the sausage outside on the big burner and the big cast iron pot....DOGS are bursting with leftovers look like they are about to pop and sleeping. I think they are gonna sleep with the fan outside as I suspect there will be a ****storm coming!
Chickens were only about 3 bux each at Randalls on sale for .69 cents a pound.... 4951

Looks good
Ray, I'd have to skip the okra and use something other an andouille sausage, it's just too rich for me. 4951
