Another vote for Chelsea's Deli.
When I make my own it's super plain, chicken, mayo and dill pickles

Sometimes I just slice rotisserie chicken and put it on my homemade bread with mayo and spicy sweet pickle pieces. But I don't mix it before. Just slice and make a sandwich.

I agree with Chelsea's Diner on KW Drive, or Chicken Salad Chick. HEB also has a good selection, too.
