up to a week.
My honey LOVES my chicken salad, I make a double batch of it weekly and always boil extra eggs, just in case I need to make more later in the week...you can keep them (shell on) for up to a week. 4951

Its SO simple, nothing fancy - and he CRAVES it...everytime I make it (weekly) he repeatedly tells me how much he LOVES it...as he is stuffing his face.
The bad part, he never says that about anything else I make - everything is just "good" or "really good" - LOL.
And yes, I am a good cook! Emoticon
I will make a double batch, it will be gone in a day.
Its great in halved avacodos!! Or wrapped in bib lettece, etc...

Ingredients:

2 cups cooked shredded chicken, cold1 cup chopped celery1 Tablespoon lemon juice (I use lime)Salt and pepper to taste3/4 cup mayonnaise 2 hard-boiled eggs, chopped
Directions:
1. Mix chicken, celery, lemon juice, salt and pepper.
2. Add mayonnaise, mix well.
3. Fold in chopped eggs, blending throughout.
4. Serve on rolls, in a hollowed out tomato, or on a bed of crisp lettuce leaves.

If frozen, do boiled eggs last longer?  Are they good after freezing?  How about uncooked eggs? 4951
