I believe it's a roast or a whole lot of steaks.
Neighbors gave it to me.

Never had it like that but a buddy once gave me some back strap (medallions) and all I used was garlic salt and onion powder. It was awesome. 4951

I tried beaver's BBQ a few days ago and had the venison gyro and it was bland and weird tasting. 4951

Roast - Just add more broth in a pressure cooker and season it like beef. You might soak it in beer or vinegar beforehand.
 
Cutlets - marinate in Worcestershire a touch of milk and Cachere's...beat 2 eggs..pour in some of the marinade. Dip steak in egg mix, roll in flour...dip steak in egg mix, roll in flour, drop in hot grease.
 
If real thick cutlets, you can butterfly, put a cpl jalapeño slices and piece of Colby jack cheese, wrap it in bacon - stake w/ toothpick- and coat in zesty Italian and a little Worcestershire. (I prefer doing this to whole tenderloin). Don't overlook it. 4951

Not really. Many cooks marinate their venison, or you hear of people "loving" deer chili or venison sausage. You can make anything taste good in chili or sausage.

The smell of bison was so bad I couldn't eat it even though I have had it at restaurants.

The venison I have had didn't smell super gamey, but did have a slightly gamey taste. It is quite a bit healthier than beef or pork though, and is pretty much the definition of free range organic!

Thanks everyone. There has to be a good 5lbs or more in the butcher paper. It was solid two days ago. Will be perfect tomorrow. I to love venison chili but think I'm gonna roast and have some potatoes and carrots.

A big hunch or roast of venison is something I like to marinate for a while before I cook it.  4951

@Champagnechola: usually depends on when it was killed and how it was treated. (Can't just quarter it, throw it in a cooler, dump ice on it and leave it for a cpl of days until you get home). Bison prime rib and bacon wrapped asparagus with a side of Johnnie Walker is one of my faves.

@podunk:  Yep!  The deer we eat have been gutted and skinned almost immediately...then quartered and iced.  Don't think we've ever had any that really tasted gamey.@beadweaver:  You can err on the side of caution and soak it overnight in milk before cooking. 4951

We have to run water through ours for a day or so and let it soak in ice water. Target age we're shooting is 6+ on bucks and they're usually rutting. I just won't shoot does to eat off our place.
