The spammers came on after I posted my picture, well, actually, they came on before, so I never came back to the thread. At any rate, yes, I use this, and do more cooking with it, now, because it allows me to cook things quickly, when I might not have a lot of time to do that, during the week. I would actually like to use it more, but other commitments keep me too busy some days. I have not made rice in it, yet, but I heard it comes out perfect. I will say, it makes hard boiled eggs like nobody's business. Now, go ahead and tell me how easy it is to do eggs, but you will NEVER have them peel as well as these - I don't care if you even say you have the magic formula. The best part, besides the easy peel? No gray ring, so if you're making deviled eggs, they come out looking pretty. I might try soft boiled this weekend, because those are my favorite.
There is a learning curve so read, read, and read some more. I know at least one of you don't use Facebook, but if I were you, I would make up a bogus account, (Martha Stewart, Ima Cook, or something), and get on the Instant Pot Community page, because there are tons of long time users on there and if you have a question while you're in the middle of cooking, they will answer it, usually within minutes.
Another nice thing is after pressure cooking, it automatically goes to warm. You can saute in it. You can use it like a crock pot (and retire yours). The inside Stainless Steel pot is fabulous! If you decide to buy one, do yourself a favor and buy at least one spare silicone seal. It comes with one, but most people have two; one for savory food and the other for non savory. There are a ton of bloggers that have recipes. You can find a few that fit your lifestyle, easy with minimal ingredients, complex and formal, etc. One of the small downfalls is meat tends to remain gray, but you can sear in the pot before cooking, and you can always pop it under the broiler to crisp it up. Trust me, when I made the pulled pork for a group, people were kind of hesitant to try it, but once they did, they came back for 2nds and 3rds, because the flavor was so good.
Also, understand that if there is a 10 minute cook time, it is more than 10 minutes, because the pot doesn't start counting down until it comes to pressure (usually 10 minutes or so), and then you also have to do a release of the pressure, which can be a quick release of a couple of minutes, or a natural release (up to 15 minutes or so), or a combination of both.
This is the model I purchased, but I don't have to cook for a lot of people. If I had a large family, I would maybe consider the 8 quart.
