I want to make a quiche for Easter brunch.  I have never made one and good recipes or suggestions?Meat free for sure.  Cheese is ok. 4951

If you want it to be easy use a premade pie crust. I've used the granola one before and it came out delicious. I like to whip the eggs before added anything else to the bowl. I add spinach, swiss cheese, and turkey.
If you want a different quiche add spinach, pepperoni, pizza sauce, cheese, and Italian seasoning. 4951

My mom always used the pre-made pie crusts. Her secret was to lay nice deli Swiss Cheese on the bottom before pouring the eggs in. Bacon, spinach, sharp cheddar cheese, mushrooms, whatever you think would be good. That was a comfort food for me growing up. 4951

My mom also uses the premade crust. You can pretty much add any meats and veggies you want. 4951

I wish I had it. All my mom's recipes accidently got thrown out during a move! I know she used Pillsbury uncooked crusts and thin sliced Swiss cheese from the deli. She always used the best Swiss, I know that. Try this type of crust with another filling recipe. I do know she put aluminum foil over the edges of the crusts to keep them from burning. Sorry. 4951

for a 9" pie:5 eggs 3/4 cup of half & half/cream - or even whole milk. Depending how rich you want it to be. 2 cups cheese2 cups of "filling" - diced veggies and or meats. Meats should be cooked in advance, and depends on the veggies how they should be handled in advance. I like to caramelize my onions in advance, and just blanch the asparagus. Green onions just need to finely sliced.My sister likes to oven roast peppers in advance to put in hers, I don't use them. preheat oven to 350* and the pie bakes in uncooked shell approx 45-50 minutes.Top should be lightly browned, and knife inserted in center should come out clean. 4951

I'm the worst at following directions, so I never used recipes for either of the two quiche that I make. I don't even time it I just pop the oven open after 15-20 minutes or so. I've never had one fall either. It's probably the easiest thing that I've ever made, besides a sandwich lol. 4951

I make mini crust-less ones on occasion.  Chop up some spinach and mushroom or whatever you like.   Put in a muffin pan. Whip some eggs in a bowl pour on top of the vegetables till about 3/4 of the way full.  Add a pinch of salt and pepper.  I also add some chopped up Swiss cheese some times and/or some bacon bits.  Bake in the oven at 350 degrees for about a half an hour, but keep an eye on them so they don't get over done.  They are sooooo good and without the bacon and Swiss cheese, they are hardly any calories. 4951
