I either go on to  allrecipes.com     or to foodnetwork website and search for their recipes and usually select one by one of my 3 or 4 favorites......I love good soups, and butternut squash is probably terrific, but peeling and cutting up those darned "boulders" is quite a challenge so I don't want to even mess with......good luck and report back if you find a good one.....October/November are great months for that kind of good warn tummy fillin' soups.... 4951

Is really messy and labor intense to make the butternut squash soup. I buy it at the store when I get the craving for it. and is cheap too. I usually get it at Kroger.  4951

It wasn't too bad to chop up the squash.  The only part i hate is removing the stringy seeds.   The roasting of everything has made my house smell heavenly.  I have it simmering in a pot now for a few minutes before i dive in.   4951

I've seen frozen butternut squash at several of the stores. Already cut up & ready to use. I think Kroger had some already cut in the fresh vegetables section. 4951

I tried to get my dh to let me use his table saw to cut up the butternut squash. But he absolutely refused.  I still think it was a brilliant idea.@foxymama, that looks like a good recipe. I would use something other than goat cheese, but not really all that many ingredients at all.  I am printing that one up.@TexaOma, the neighborhood Walmart, Target, and Randall's had bags of butternut squash already cut up.  I was so happy when I found that.
