So I've decided...been way too long since I've last made Indiana style pork tenderloin sandwiches. Tomorrow is going to be the day.....!
 
1st. Yes that is a normal sized hamburger bun.
 
2nd. Have to get to the store early so I can get the buttermilk maranaide going.
 
Little known but parts of Indiana have a strong German heritage. Essentially this is schnitzel on a bun.....and it is sinfully good.

Yes. Cut it from a full tenderloin and then pound it down to about 1/4" thick.
 
Cut 2" widths, butterfly and then give it the beat down. 4951

Food network has a very accurate recipe and that is where I grabbed this picture from:
 
I will deep fry mine in a basket but you can also skillet fry in a cast iron pan using peanut oil.
 
Here's the recipe....but I use Ritz or Club crackers instead of saltines bc I like their buttery flavor.

Also don't omit the cayenne....even if your not a spice person. It comes through as a nice accent and not overpowering.

Yes I can make those as well. Homemade dough and potato filling but w more of a Polish taste from my other side of our family.
 
Pan fried in butter after a short blanche is absolutely the best way.
 
And points for you, Dan...Just about no one knows of these down here. 4951

I just came back from Kroger and dropped 4 in the buttermilk for tonight.
 
They say min. four hours but I'm going for 12. Likely I won't fire up the fryer until at least 7 tonight. 4951

I'll deal ya one better.....my 5 ft 2 polish grandmother that used to make them by the hundreds each year for her church bazaar.
 
I learned from her. .... and I always have a thanks moment every time I make them.
 
She passed away three years ago at the age of 93. 4951
