It's not that bad with two people. It's the breading of the eggplant that is a lot to handle. I finally have it down though. I do that part while the sauce is cooking. Still not fun but again worth it. Makes about 12 servings and very filling.

Do you peel the skin off? Anytime I have made a similar dish with the skin on, it seems too tough. Maybe I didn't cook it long enough. It was years ago. 4951
