My mom has a recipe for Eggplant Parmesan and it's like candy, to me. Unbelievably good. A lot of work, though. 4951

It's not that bad with two people. It's the breading of the eggplant that is a lot to handle. I finally have it down though. I do that part while the sauce is cooking. Still not fun but again worth it. Makes about 12 servings and very filling. 4951

Love eggplant parm...  Too hard to make for one and I have not found a good one dining out.  I had lasagna made with eggplant instead of meat and it was quite tasty.  You can keep the eggplant if it is by itself though.... 4951

You should try it with black bean garlic sauce at your favorite Thai restaurant. Add pork if you're not feeling like a vegetarian meal. 4951

Do you peel the skin off? Anytime I have made a similar dish with the skin on, it seems too tough. Maybe I didn't cook it long enough. It was years ago. 4951

I leave it on, no issues with it being tough at all. I do coat the slices with salt for an hour then rinse as in the directions then rinse. Think it removes the bitterness of it? I think it depends on how they are cooked. I remove it when I grill them otherwise way too tough. Frying though seems to soften it. 4951

I've never had eggplant parmigiano, but it looks/sounds delicious.My father always grew eggplant and cooked it in a variety of ways.  My favorites were when he cooked it down with onions and shrimp, and when he sliced it, breaded it, and fried it. 4951

I grew eggplant last year and had so many I didn't know what to do with them. I made eggplant parmigiana a couple times but saved some steps by using pre-made jarred sauce instead of homemade. I found it rather easy to make. I coat the eggplant in panko and lightly fried then just layered it with mozzarella cheese and the jarred sauce. I also turned the rest of the eggplant into baba ganoush, it turned out pretty good too. Unfortunately I am not so lucky this year, my eggplant plant died almost as soon as I put it in the ground.   4951
