Funny but I remember growing up in a house on Long Island with both parents who worked in Manhattan during the week and my paternal grandparents lived with us so weekday nights mom and dad ate later than us but on Sunday we ate as a family and even dressed up a bit. The grandparents were British so Sunday always was something roasted, beef, a pork roast or chicken.... Turkey was just for the big holidays back then. I got several of those whole chickens at Randalls a few months ago when they were like .69/lb so I thawed one out. I am most nostalgic for good roast chicken. I usually rinse it out, can't understand why the so called experts say don't as it has a lot of liquid and the liver, neck and gizzards not to mention the extra fat to be removed. I save the livers. I love them fried up in some butter and a spritz of flaming Cognac with eggs for breakfast the next day. Anyway the chicken is roasted in a shallow pan over some chopped aromatic vegetables, I smear the breast with some butter, salt and pepper and herbs and squeeze a lemon over it. Comes out nice and crispy and I think we will have some roasted potatoes and green beans. I don't render the fat for later use but my grandma did and she wasn't Jewish. Schmaltz I think it's called.
@Chrisinkingwood:
Ok so would they cook abroad to beef until it was 1/4 the size it went into the oven?! lol My parents (Bronx and Queens) have great stories of this. And boiled potatoes (Dad's Irish side).
Let us know when you find good meat deals, please! I love a good roasted chicken! 4951
