So my son in law wanted to spend some quality time, and process a jack fruit, which both of us love. He has seen his family do it, but had never done it himself. I saw his dad do it once, but that was it. So we stopped by H-Mart before going to the restaurant last night. Picked up a small 12 pounder.

Then quarters, remove the core, which has a sticky latex sap.

Work the seed pods out, and remove the seeds, which are suppose to be edible also, like a vegetable.

Ate a lot of it just like that, fresh. I'm making a compote to use in my yogurt for breakfast. My daughter and husband room about half back to Dallas with them, she wants to make a jam with some, and he will eat the rest of i I know him. 4951

I bet that will be great in your yogurt! I believe I have a recipe for just the seeds. I will have to check and see. I will try to find my chili recipe for you as well because the seeds go pretty good in that as well. 4951

Looks a little like a durian fruit....less spikey

@Retired_Engineer: They are, a little sweet like the fruit, but very much like dental floss. Maybe if it was cooked, IDK.
