I butterfly it, stuff with cream cheese and diced jalape�os, close it up and wrap with bacon. I cook it in my big easy infrared cooker

You didn't mention if you have boneless loin or one with rib bones. Pork loin in general can be roasted in an oven or slow cooked in a crock pot. For the former I rub the loin with a herb mix, salt and pepper and set on top of some chopped vegetables, especially some root ones like onions, carrots, turnips, parsnips, etc.  For a slow cooker you can go just about any direction, Italian, Asian, whatever and just add some braising liquid like stock or wine and some vegetables and let it slow cook. As far as doneness if I am roasting I try to get it off at about 145-150 degrees internal so it is just a hint of pink an still juicy. Obviously for a slow cooker it will be more done but should be moist from braising. 4951

I coat with a bbq rub or flavored glaze then pan fry in a skillet over high heat, turning til all sides are browned then cover, and cook over med-low heat until done. Slice and serve. 4951

I use my secret bbq dry rub. Push some cloves in, completely cover in the rub. I tent it in a roasting pan with 1/4 cup of water in the bottom. I cook at 325- 350 for 2- 2 1/2 hours. I sometimes lay orange slices on top and add a touch of juice to the water.
falls apart fork tender.
The dog literally parks himself by the oven. Time to make another. Thanks for the reminder.
I've also done them with teriyaki pineapple over rice with veggies on the side. 4951

Slice it into some nice steaks. Marinate in Italian dressing and grill. Or you can freeze steaks for individual portions to defrost and use as needed. Pound out thin, bread and fry, serve w cream gravy, or make smothered pork steak with onion gravy. You can also cube and make a wonderful green chili pork stew to serve over rice.

So I took ideas from above and with what I had in my pantry already.  I cooked the most tender and delicious pork roast ever.I put several cloves of garlic in the crock pot, the pork roast i marinated in italian dressing, beef onion Lipton soup mix, salt, Tony's, and some Italian seasoning.  Then poured in some chicken stock and seasoned again with Tonys.  I wish I had had onions and sweet potatoes but I didn't want to go grocery shopping.  I will add next time for sure,  it is delishous!! I am very happy with the results.  I cooked it on low for 8 hours in the crock pot.   4951

If you slice it I like to coat it in olive oil salt and pepper and grill it. Or whole season it and wrap in bacon and bake it in the oven. 4951

Leftovers are so good today.  It made a great little gravy for brown rice.   Reminds me of eating rice n gravy in LA at some great little Cajun places on the USL campus.   4951
