Breakfast Fried Rice

FoFa says: "When I was stationed in Asia, I had a few variations of this for breakfast. This is the basic recipe, I actually like to add a little finely diced onion also. The basic object is to not spice it too much. Sometimes I leave out the Soy to give it even a lighter taste. Sometimes I use turkey bacon to have the flavor, but less fat, and sometime I leave all the fat in it from regular bacon. Depends on my mood. You can chop up some mushrooms and give them a quick fry in the bacon grease for an additional flavor also.
But you should try it with basic recipe first time."

2 cups cooked rice
5 strips bacon, chopped
3 green onions, chopped finely
3 eggs (also works with egg whites)
1/3 cup soy sauce
3 green onions, chopped finely
Salt and pepper, to taste

Cook rice and set aside.
In a large skillet cook the bacon over medium heat.
Once the bacon has browned, drain half the oil and push the bacon to one side of the skillet.
On the other half of the skillet, add the 3 eggs and scramble until cooked.
Turn the heat down to low. Add the rice until all ingredients are mixed.
Add the soy sauce evenly over the rice and mix until the rice takes on a light brown color.
Add the chopped green onion.
Salt and pepper to taste.
