Green Pea Casserole

FoFa says: "This is one of those I ran across, tried the original recipe and thought EH, so so. But then I made a couple modifications to it, and it turned much better. But I love green peas, so here is my modified recipe. Note - I like to add some ground black pepper to the soup mix, but too much can over power it, so use sparingly."

30 Oz. of frozen green peas. About 4 cups give or take.
1 can Cream of Mushroom Soup with Roasted Garlic (Plain and some garlic powder works good also).
1 cup sour cream I have found cottage instead works pretty good also.
3/4 cup grated cheddar cheese for top
1/3 cup grated cheese for main base, I like a blend such as Italian or Mexican.
1/2 cup melted butter
1 cup crushed crackers (I like ritz or club)
Some cayenne pepper (optional)
1/2 Tsp. salt (i usually use a little less, but that is just me)

Place frozen peas in a colander, give a quick rinse and set out to thaw some.
Mix soup, sour cream and 1/3 cup cheese blend and salt together.
Fold in peas.
Spread in a 8 X 8 baking dish.
Sprinkle the 3/4 cup of cheddar on top evenly.
Mix melted butter with cracker crumbs, spread over top evenly.
Sprinkle cayenne on top if you choose to use it.
Bake at 350 Degrees until bubbly and golden brown, about 30 minutes.
