Cuban Black Beans

"I don't really have exact measurements for this recipe. I just kind of made it up one night with the ingredients I had in the cupboard so feel free to add and subract indgredients to your preference."
-1 can black beans, rinsed and drained
-1/2 red bell pepper; chipped
-1/2 small onion; chopped
-1 1/2 can vegetable broth
-1/2 cup brown rice
-1 teaspoon of ground cumin
-sea salt and ground pepper to taste
-1/4 cup chopped fresh cilantro
-1/3 fat sour cream (as garnish)
Toss the first 7 ingredients into a saucepan, bring to a boil. Cover and simmer for about 50 -55 minutes. Remove from heat, let stand about 5 minutes. Stir in cilantro and top with sour cream.
