EMILY'S CHEESY CHICKEN SIMMER

INGREDIENTS
2 tsp vegetable oil
1 lb boneless skinless breasts
2 cups broccoli florets
1 can cream of chicken soup
1/4 lb (4 oz) Velveeta cubed
2 cups cooked rice




DIRECTIONS
Cook chicken in oil in a large skillet. (Sometimes I use butter instead with a little garlic salt.) Takes about 3-4 minutes on each side on med-high heat.

Add broccoli, soup, and Velveeta and stir until well blended. Reduce heat to medium and simmer until chicken is thoroughly cooked.

Can also just throw it all into crock pot early to save time...

Serve over rice.

To spice it up add, green chiles or Rotel, some carrots, corn, black beans. Whatever sounds good!
