Donnatella, I am embarrassed to say, I simply cut up some cooked potatoes and cauliflower, covered with store bought queso and breadcrumbs, in 350 degree oven for 30 minutes.  We'll see how it turns out.   4951

@N+T: What is the deal with hatch chilies? To me, they look like poblano or Anaheim peppers with a different name. And until a few years ago, I had never heard of them.

Hatch chiles have been very popular in New Mexico for years.  They are just now popular in other parts of the country.  They are really flavorful when roasted.  You wash the burnt skin off and use the "meat" part in many recipes to add a little flavor and kick.  My favorite way to use them is in chicken soup.  When you are sick and eat a spicy chicken soup it clears your sinuses.  Look up hatch pepper recipes in Pinterest for ideas. I buy them roasted at HEB when in season and then freeze them in packs of 3-4 peppers. To use through the year.  4951
