@Retired_Engineer: I have a few customers that still do. I sell them the cajun chef file' ( 1lb institutional size)

@mardigrasman: My dad used file a lot.  I never really cared for it.    Sometimes I like to use okra as a thickener.

It is OK there, but not like homemade, imo.Treebeard's downtown is pretty good, or was the last time I was there.And before you make it make sure you get a good recipe, like from Ray, mardigrasman, Retired_Engineer, or meEmoticon    This will be way better than the recipes you may find online.

@bearae:   I would if I could.  I don't use a recipe.  Never have.  I learned by watching my dad and then adding my own touches.  I eyeball quantities until it "looks right".

Then your recipe would be perfect for me!! I never measure...a pinch of this a handful of that....so all I need to find out is what all goes in...all the way down to spices....I can figure the amounts. Would love it if you would share Emoticon 4951

@mpjp0907 and @bearaeI just thought of another place that has a fairly decent gumbo.  Jason's Deli has a reasonably good okra and shrimp gumbo.  4951

Don't ever, ever put File in a pot a gumbo while it's cooking...it's the major sin of gumbo cooking and will totally F up what gumbo is supposed to be. File is an "additive" for those who want it immediately after their their gumbo is already in their bowls.
 
I know what I'm talking about...and @Ray: ...I'd totally take that challenge. Emoticon
