So, I am trying to find someone who processes deer meat, that would bee willing to keep half of the deer as payment for processing the other half. This type of arrangement definitely used to be more common years ago, but I am hoping I might be able to find someone who still does that sort of thing. Not being originally from this area, I don't even know where I would begin to find anyone that processes deer meat, in the first place. Any suggestions, or info is appreciated. Thank you. 4951

@saboecher: Place off 1960 in Humble.  Last Step Deer Processing.  Not sure if they are going to do it for free in return for half the meat though.  Might need to swing that deal on here and get the party to meet you there.

It's been a very long time for me to have done any of this. I used to have an arrangement w/ an older butcher, who had a rather set way of processing things. It was a set variety...sausage, steaks, and stew meat, roast cuts, and some pounds of ground, mostly. I admit, I was never really a fan of that sausage, but he went super heavy on the seasonings. Seeing as how he's the only person I've ever used, I didn't even know you could ask for certain things. I thought you merely got what that butcher had as their standard and that was that. It never even occurred to me to ask if there were other options. Are there other ways of processing besides that? Depending on when our tax return comes in, I may try that place off of 1960, that someone mentioned (thank you), just to try to get some deer meat in the freezer, before the end of the season. I would still like to find someone who will do the half for half though, for future arrangements, if possible. Thanks for the responses, btw. I didn't think I would receive responses so quickly. First time to use the message board here. 4951

@ KTown Texican - If you're serious about that, I can call the place suggested earlier in this strand, off of 1960. I have a family member willing to get a deer for me, as soon as I have something definite worked out. Thank you 4951

Is the deer already quartered? Frozen?

nevermind..I just read you dont have one yet..we(meaning I) do our deer ourselves except for the hamburger and sausage. Its not hard to do at all as long as you have a sharp knife and can follow a line. 4951

@BooBear - my uncle goes hunting, during the season, nearly every weekend. We were talking, during the holidays and while hunting is something I would like to get back into, when my kids are older (I have 4 that are still pretty young), in the meantime, I miss having access to venison and don't have any place to get the task done, here at the house, via a place to hang a deer, skin it, cut it up, etc. While we were talking, he said he didn't know of anyone, who would make arrangements like that anymore either, but if I found someone, he'd get me a deer, his next trip out. That's how I ended up looking for a forum to ask around. 4951
