Mine is chicken and sausage gumbo. I make the roux from the sausage & chicken fat then sauté my onions and celery in it. I also debone a whole chicken. Get my roux as dark as I can. Let it stew for a couple of hours, adding fresh pepper and seasoning as needed. Last 20 min I add a  freshly chopped garlic bulbs, maybe 6-10. Serve over rice. C'est si bon!!!!! 4951

@GoldenGirl: You have to be seriously hot if you still have a man with that level of culinary knowledge.

@beastmode: ha ha !!!  Actually when we were first married I used to make huge meals... One of my specialties was stuffed pork chops.  Then 10 years later we had kids and everything changed... Picky eaters and kids who would not appreciate a good meal when it was put in front of them.... so I have digressed....

I am going to try to make some Pecan Pralines this weekend.  I don't eat them but my mom likes them.  I made them with her last week and they didn't come out great.  I wish I had my grandma's recipe as the ones I have tried don't seem to come close.  4951
