And so continues my need for hibernating and comfort food. You can take the girl out of the North, but you can't take the North out of the girl no matter how warm your Decembers are! Tonight's dinner (with a side of string beans to, you know, balance out the fat scale):http://www.thecoersfamily.com/cheesy-bacon-chicken-casserole-recipeChicken, bacon, and creamy Monterrey Jack cheese come together for this delicious and easy casserole.  Ingredients4-5 boneless, skinless chicken breasts6 strips of quality bacon – cooked and crumbled2 cans cream of chicken soup2 cups shredded Monterrey Jack cheese1 box (16 ounces) dried spiral pasta1 tablespoon garlic powderSalt and pepper to tasteInstructionsCook and crumble bacon. While bacon is cooking, cut chicken into bite-sized chunks.Set cooked bacon aside for later use.In the same pan, cook chicken in bacon drippings.Add garlic powder and salt and pepper to taste.While chicken is cooking, prepare pasta according to directions.Spray a 9×13 baking pan with non-stick cooking spray.Drain pasta, return to pot.Add chicken, both cans of cream of chicken soup, 1 cup of Monterrey Jack cheese – stir to mix well.Pour into prepared baking dish.Top with crumbled bacon.Top with remaining cup of Monterrey Jack cheese.Bake at 400 for about 20 minutes, just until cheese is melted and beginning to brown on top. I've never made this before, so if you're interested, I'll let you know how it turns out! 4951

Sounds delicious and easy... Mine is:
In a crock pot
4 chicken breast
Box of stuffing mix
Mix can of cream of chicken soup, 1/2 cup sour cream & 1/2 cup milk
Pour over top of stuffing
Cook on low 5 hours
Fluff with fork and eat 4951

I don't like using canned creamy soups, I have a true mental block about it. But it sounds good if it can Be made from scratch. Emoticon

@TheTruthHurts: Just say no to canned cream-of-[fill in the blank] soup. Way too easy to make any of that shiz from scratch without all of the unmentionables. Emoticon 4951

The one I make you can substitute chicken bullion cubes, use a cup of sour cream and 1/2 cup milk. I am just lazy when it comes to cooking so I use the soup. 4951

japanese chicken-scallion rice bowl1 1/2  cups instant brown rice1   cup reduced-sodium chicken broth1 1/2  tablespoons sugar2   tablespoons reduced-sodium soy sauce1   tablespoon mirin, (see Ingredient note)2   large egg whites1   large egg8   ounces boneless, skinless chicken breasts, cut into 1/2-inch pieces6   scallions, trimmed and thinly sliced1. Prepare instant brown rice according to package directions.2. Pour broth into a heavy medium saucepan, along with sugar, soy sauce and mirin. Bring to a boil; reduce heat to medium-low.3. Stir egg whites and whole egg in a small bowl until just mixed. Add chicken to the simmering broth. Gently pour in the egg mixture, without stirring. Sprinkle scallions on top. When the egg starts to firm up, after about 3 minutes, stir it with chopsticks or a knife. (The chicken will be cooked by now.) Divide the rice among 4 deep soup bowls and top with the chicken mixture. 4951

You might be surprised. Usually it just means you have to add a few more things and it's not so bad.
 
And those soups are loaded with sodium. About the only canned things I cook with routinely are tomatoes. Emoticon 4951
