Well here is some new information:Story HereIn the U.S., we hear fast food being blamed for much of the nation's rising tide of obesity and diabetes but there are places where the problem is even worse -- and one of them is right next door, in Mexico. And now a leading Mexican authority on heart disease says it's time to declare an emergency. He's calling for mandatory screening of 18-year-old Mexicans to halt the epidemic of cardiovascular disease that's plaguing the country. "The Mexican diet is more dangerous than fast food chains," said Dr Enrique C. Morales Villegas. 4951

Because of the massive amount of carbs (rice & tortillas) combined with extremely saturated-fatty cholesterol-filled pork and other meats.  The amount of vegetable shortening (trans fats) used is extremely high as well.  Beans & avocados are about the only two healthy things eaten commonly in the Tex-Mex diet.If you notice the Asian diets contain even more rice.  Well, they do not eat nearly that saturated fat, trans fat, or cholesterol.  Plus like the Greek style diet they eat massive amounts of fish and fresh fruits and vegetables.  Healthy oils in both as well. 4951

I think we need to find out exactly WHAT the Mexicans from Mexico are eating.
 
It isn't Tex-Mex like what they eat here. And different parts of Mexico have different cuisine too.

It's worse as I worked with many in kitchens. Watched the guys cook it many times and I tried most things they did cook. Watch a YouTube video on authentic tamales. So much trans-fats & cholesterol from the lard and/or shortening. 4951
