Ingredients: 1 1/4 lbs medium asparagus, tough stem ends trimmed 1/2 lb medium white button mushrooms, stemmed and quartered 2 tablespoons extra virgin olive oil salt, preferably the coarse variety, and freshly ground pepper, to taste 2-3 teaspoons balsamic vinegar or 2-3 teaspoons sherry wine vinegar Directions: 1 Preheat oven to 425*. 2 In a non-stick baking baking sheet with sides, toss the asparagus and mushrooms with the oil and season with salt and pepper. 3 Spread the vegetables in a single layer. 4 Roast for 10 minutes or until the vegetables are tender and browned, turning once or twice. 5 Place vegetables on a serving platter. 6 Sprinkle vegetables with vinegar and toss gently to combine. 7 Season with additional salt and pepper as desired. 8 Serve warm or at room temperature. Makes 4 servings. 4951

I roast asparagus with mushrooms and red onions often.. Great combo!  Even Trader Joes carries that mix.   4951

I out did myself yesterday. First time ever, but I picked up a pork loin center roast with bone-in. I made a mixture of thyme, sage, rosemary, garlic (all fresh but dried from a friend's garden) cut slits in the roast and put slices of garlic in the slits. Then I spread a little bit of olive oil on the roast and put on the spice mixture.  I cooked it at 400 for 20 minutes, then 325 for a hour and 15minutes. Shut off the oven and let it sit in the oven for 15 mins. I then wrapped it in foil till I finished the side dishes. It looked so pretty too. 4951
