The guy from the Binswanger is supposed to come by around lunch and change out the windshield on the wife's new car that got a big crack from a rock on 59 two weeks ago. So I figured I'd cook a few things for my MiL.  She is doing much better, she's gotten back to eating and drinking liquids like she should but we think it's better to just make up some dishes for the week. She just seems to have forgotten how to cook some things and we are worry if she doesn't have things microwave ready she just forgets to eat. I got a boneless shoulder roast on sale at HEB and figured
that could cook in the crock pot. Have some chicken thighs I'm going to
cook for her dinner and another peach tart or pie since they have been so
cheap. Also making a small lasagna for to portion out in corning-ware dishes. 4951

Don't forget to put names and info on portion size. Ex: Lasagna - 2 servings

Does she drink ensure? I had to get my dad to drink it. It's good for them. My dad liked them so it wasn't hard to get him to drink them in between meals or when he didn't feel like eating. The Drs do recommend it. 4951

I have pork in my crock-pot, making pulled pork for tonight. Found a recipe that had rave reviews. Put in brine yesterday and made the rub also to use today. We will see.... 4951

@RogueHippEE: Right! My husband smoked a porkloin on Sunday for dinner; leftovers last night, and I just had pork tacos for lunch. EmoticonThat's nice of you @ChrisinKingwood - you should start a side business! Some two-income families would pay for that service. EmoticonI'm getting ready to prep mozzarella-stuffed meatballs for the crockpot. My boys love them and were bouncing off the walls this morning when they heard I was making it for dinner.

I'm doing the same thing for a neighbor that just got out of the hospital.  I bought a beef shoulder on sale at HEB as well (great deal). I use one of those McCormick cooking bags for pot roast in a slow oven with the veggies  I also bought the ground chuck patties that were on sale and brought her a cheese burger for lunch (she was craving that) and used the rest of the patties to mix up into a meat loaf. WIll roast some new potatoes to go with that.  I have really started buying just what meat HEB has on sale and planning meals around that. I find it really saves me money instead of planning my meals first and then shopping, lol.  Last week I bought her the special at Pappas BBQ- it was $7.99 for a half smoked chicken and two sides.  The chicken was huge, and the sides she wanted were potato salad and green salad. She said it made two meals for her and a sandwich the next day with the remaining chicken and the bread they included. I know your mother will be looking forward to your home cooked meals. That's a great idea to cook for your mom. Sometimes I used to do the same stuff and my mom will get happy tears . It's an awesome feeling to make our mom happy 4951
