My DW hates it so I usually end up cooking it for myself. But I do love it. I think it sounds better with the name many Europeans use, Aubergine. 4951

I had an eggplant plant last year that gave me so many eggplants I didn't know what to do with them. I made parmigiana and grilled them and finally turned the rest into baba ganoush. I tried planting another one this year, but it died. Maybe I'll have better luck next year...  4951

I love it! You have to salt it, and leave it for a couple of hours, though, to get rid of the bitterness. (Slice it first, and salt the layers!) 4951

I LOVE eggplant just about any way it's prepared!!  Emoticon  Unfortunately, DH doesn't share my enthusiasm for hardly any vegetables. (And, no, I don't consider French Fries a vegetable!) He MIGHT try it if it was fried... and perhaps with cheese on it. He'll eat almost anything if it's fried and has cheese on it!! 4951

And be sure to get the male eggplants... They have fewer seeds and supposedly that makes them less bitter... (doesn't necessarily mean being female makes one "bitter," so don't go there!!  Emoticon   ) The male eggplants have the round "circle" at the bottom. The females have the "dash."  Emoticon 4951

@buffaloglenn: I like those, too, but I'm not an eggplant super fan. Outside of those and maybe a couple of other dishes, I am content to just take-it-or-leave-it, but I don't go out of my way to include it in the menu.
