There are green ones that ripen w/o turning purple..they tend to be big though. 4951

Fig are wonderful.The ones that are green, are still good fresh, but usually used for drying and have a strawberry colored flesh (inside).Most are purple when ripe (and real soft) and depending on variety can be very large, or small. The smaller ones are usually a tad sweeter, but all are sweet.I like making jam and compote from mine, plus I eat a ton of them fresh (what the squirrels and birds don't get).I get a large crop usually about this time depending on weather, and a smaller one early to mid autumn.I have Texas Brown Turkey (large purple) tree right now. 4951
