We are in a rut of what to cook for dinner. What are some favorite quick to prepare meals?

Fried Rice - great if you have leftover pork, chicken, frozen shrimp and some vegetables.  Can make it with brown rice for a little better position on the glycemic index.  We have a wok so it's easy.  Basically all you do is heat some peanut and sesame oil in the wok, throw in the vegetables, stir fry for a bit, add the leftover meat or shrimp, stir fry for a few minutes, add the rice and mix well, add some oyster sauce or soy sauce.  Turn off the heat and stir it all up.  You can spice it up if you like with chili paste or sriracha.  Also, if you want, you can add a couple of beaten eggs in the middle of the wok and quickly scramble them.  4951

My quick n easy go to meals are:1.  Trader Joes mahi mahi burger or turkey burger patties and fix a salad or steam some broccoli , trader Joes cauliflower rice or vegetable fried rice.  Live trader joes frozen section!!2.  Throw some BBQ smoked brisket, pork butt or chicken that Chad, aka, BBQGuy smoked for me.  I stock up on it in my freezer in meal size portions.  Then a quick salad usually or sweet potato and green veggie.3.  Grilled fish rice bowls are easy.  You could throw some chicken in the crockpot and use that too.4.  Breakfast for dinner5.  Go out to eat! 4951

Brown a pound of hamburger meat. Drain fat. Add can of tomato soup and then 1 soup can full of chunky salsa. Simmer and stir, top with pepper jack cheese and then spoon it in a bun. (I prefer toasted onion rolls). If you want to spice it up throw in some cayenne pepper or crushed red pepper.
 
Serve with tostitos scoops chips and beer.
 
Ice cream for dessert. 4951

Tonight, using my trusty Grill Pan, I beautifully seared up some Chicken Breasts that I had marinated overnight in Lawry's Herb & Garlic Marinade With Lemon Juice....(Lawry's makes a variety of delicious, and quite useful, Marinades...  Good for Chicken, Beef, Shrimp, Pork and Veggies!).....And served the righteous bird up with Wild Rice and Roasted Asparagus.......It was WAY lovely, easy and yumm-mo!Another easy option is Tostadas....  I use HEB Brand Baked Tostadas Shells, and simply layer either Refried or seasoned Black Beans, shredded Lettuce or Cabbage, Cheese, perhaps a sliced Avocado, and BAM! ....Totally Terrific Tostadas....    (You can easily add sliced Grilled Chicken Breast and a dollop of Sour Cream if you please....)Easy-Peasy Pesto Pasta:  Boil the Pasta of your choice; I personally am quite fond of Penne....   Sautee up some Shrooms and set to the side:  Toss the Shroom-age with the cooked Pasta and mix with store bought Pesto;  Wilt in some fresh Baby Spinach; If you happen to have some defrosted Frozen Peason hand - toss them in as well!  Lastly, top off with toasted Walnuts and a shaving of fresh Parm if so desired, but totally not necessary....

Egg stew. celery, carrots, onions. Make a roux. Cook veggies in it, add water, seasoning then hard boiled eggs on top served with homemade buttered bread over rice. 4951

Our go to side has become sautéed baby spinach but at $4-5 a pop, its not affordable for a family since that feeds 2 people.
 
I'm having a hard time adjusting to feeding only 2 people. It's almost cheaper to just eat out. We don't and have never really done leftovers unless michael is taking them to work the next day. It doesn't seem worth the effort and I have found we will skip dinner altogether when it's just us. Just snack.

@BooBear: A little EVOO, S & P, wilt the whole bag of spinach in the pan and BAM, easy yummy dark green side for almost anything. That's one of my favorites. 4951

Rotisserie chicken fajitas- shred chicken, put out some sliced onion, grated cheese sour cream and pico. Heat some flour tortillas and let everyone fix their own. Can serve up some Spanish rice or beans on the side. Save the bones and meaty bits. Boil to get some nice broth. Throw in any leftover meat. Add some chopped celery, onions, carrots, and noodles, salt, pepper, thyme for a chicken soup to have with grilled cheese the next day. 4951

I have a few crockpot cookbooks you're more than welcomed to borrow if you would like. I believe I also have a few 30 minute or less meals and 1 pan meals. Heck it might be easier for you just to come look at my collection and take what you want to try lol.

Taco bar - season and cook the ground beef or chicken, heat up the shells, then get pre-shredded, pre-chopped and/or pre-prepared cheese, lettuce, tomato, Pico de gallo, then open salsa, sour cream, store-made fresh guacamole or sliced avocado, etc. and let everyone make their own tacos, or taco salad. If you take advantage of the pre-prepared items, you can have dinner ready in 10-15 min.
 
Make it easier and eat on disposable plate and use plastic ware.
 
Quick Chicken Tortilla Soup - use one of the soup kits/soup starters like Bear Creek Tortilla Soup (dry mix on the soup aisle). Add the directed amount of water, salsa, cut up rotisserie chicken, a can of charro beans and let it simmer 15-20 min or as specified on the package. BAM! You have a big pot of chicken tortilla soup as good as the restaurants. Add grated cheese, avocado slices, a few crunched tortilla chips and a bit of sour cream to the top of each serving. 4951

Easy Dish Tacos (HEB products)
 
Fresh or frozen fish filets of your choice
Fish Fry breading
1-2 T olive oil
HEB Cilantro Cotija or Acocado sauce (fish dept)
HEB mixla tortillas
Packaged shredded coleslaw cabbage
Lemon or lime slices
 
Coat filets in fish fry, lightly saute in a pan until golden brown and thoroughly cooked on both sides.
 
Mix cabbage wth cotija or avocado sauce.
 
Stuff each tortilla with 1/2 filet, coleslaw, avocado slices. Add a squeeze of lime or lemon.
