My MiL gave me her grocery list and at the bottom it said, "one small loaf of salt rising bread." I Googled it and it was a bread that was typical in the last century in the Appalachian mountains near Kentucky, Tennessee and the Carolinas.  Instead of yeast they used a mash of corn meal, flour and some mashed potatoes to cause fermentation. I mentioned it to my DW tonight, she is back up in Chicago. She said she hasn't had salt rising bread in 30 years, used to get it all the time when she lived in Tennessee. She said it makes the best bread for toast or sandwiches. Mom is funny, the things that come to mind for her like they are every day but are really just memories. 4951

Sounds like some real hearty bread but I bet it's pretty good if made right. A lot of things like that get lost over time. Like bread ovens that burn wood. Watched a video the other day of a guy who makes them, thing can get to like 900 degrees then you use it throughout the day to make bread, cook, keep things hot or warm as it cools. Pretty much stays hot all day.  Or meat, don't need a fridge, it can keep for weeks buried in lard. 4951

That is AWESOME bread. My grandma used to buy it. Toasted and buttered, it's out of this world. We used to be able to buy it at Griswold's, a big German bakery in southern California. 4951

Sounds pretty much sour dough, just a slightly different starter.Although I must admit, I've heard if it growing up in Michigan and Indiana. Probably have even eaten it. Just been so long, I don't recall exactly. 4951

The best I've had came from Angelica Bakery, Angelica NY.  Put some real butter on toasted salt rising bread and its great!  I pick some up every time I go "home". 4951
