Aside from salt and butter (or margarine), what do you add to potatoes when you make mashed potatoes?  Milk, sour cream, cream cheese, etc.?  Do you just mash them or do you use a hand mixer? 4951

@donnatella: I use a hand mixer with milk, salt, butter and sometimes American cheese.  I've never really gotten too creative on them. I don't like mine real lumpy so the hand mixer works better for me.  I use the masher on my avacodo's.

I keep the skin on and mash them with a bit of cream or milk + butter & a little pepper....maybe some garlic salt too. I used to use a hand mixer, but now I just use a fork. 4951

I think the mixer makes them pasty, I like to use a ricer then add milk or half and half, real butter, salt and pepper.

@donnatella, sometimes I make mashed stuffed potatoes.   Esp good with BBQ Chicken.  I use sour cream, butter and some 1/2 and 1/2.  I mash with a hand masher.  Then I add in sharp cheddar.  I always keep a block on hand, and it only takes a few minutes to shred it myself.  It always melts way better than the preshredded stuff.    Salt and pepper.Just regular mashed potatoes, I prefer to use a mixer, 1/2 and 1/2, salt and pepper and butter.  Real butter.  
 
@Fallon: You are correct.  It has to be real butter in mashed potatoes or they just don't taste right.

We usually now make 1/2 potato (skin on) and 1/2 cauliflower, with a touch of butter and some sour cream.Way better than plain mashed potatoes 4951

@FoFa: I tried making mashed cauliflower one day and it didn't come out right.  How do you do yours?

Mash em with a. Hand masher....BUTTER no crappy margrine some heavy cream , kosher salt, and FRESH ground black pepper to taste.  Yukon gold or red potatoes make the best mashed taters. Peel them or not,personal preference. I also boil my taters in chicken stock vs water.....everyone swoons when they eat 'em! 4951

I have been making them like Mom has always made them:  a bit of milk, butter, salt, then whipped with a mixer.  They are extremely light, but amazingly good. Then, I've had them out and they are much denser.  I've been experimenting with recipes and style of potatoes, trying to recreate them.  So far, using new potatoes, butter and cream cheese gives them that restaurant style texture and flavor I've been trying to recreate.  With fall coming and more crockpot cooking, roasts, etc. I thought I would trying to change at least some of it up so it doesn't get boring, since my crew loves roast, mashed potatoes and a veggie side.  4951
