Thanks to @whiskytangofox, I had to look up a recipe for this! Oaxaca cheese is a Mexican white hard cheese that has a stringy texture like mozzarella.  It's named after the Mexican region it originated from, Oaxaco (pronounced like "wahaco") 4951

@ctl74: I think the big Kroger 59@NP has it. Can't recall but they do have a variety of Mexican Origin cheese

I second the opinion that the big Kroger should have it. If not, try the little Mexican market type places. If you still can't find it, let me know and I will check for you next time I go to Fiesta and Mi Tienda. 4951

@ctl74: HEB started carrying it (HEB brand) in the shredded cheese section. I like that for convenience (great for nachos, tacos, etc.) but also prefer it in regular form (unshredded) version.
 
Sort of a cross between Monterey Jack and mozzarella, just not as heavy as the mozzarella. 4951

This sounds really good. Has anyone tried this in a low carb version? Like using the peppers uncut as the noodles? It seems like I saw another recipe floating around like that.@ctl74: It seems like I have seen this cheese at most major stores except for Randall's. It's round and flat, about an inch thick, if memory serves. Near the baby bells and/or other specialty cheeses. 4951

That recipe does sound good.  My daughter makes chicken enchiladas in a white sauce that is very good.  I need to ask her for the recipe.  Instead of rolling the chicken in tortillas, I suspect we can reduce carbs by layering the tortillas instead. 4951

@Retired_Engineer: There are a bunch recipes for using thin zucchini slices (see below) instead of lasagna noodles on that intraweb thingy.I have not tried this as of yet. But we have used whole grain lasagna noodles and noticed no difference for the most part.

@FoFa: Thanks for the suggestion.  We've also gone to whole grain pastas.  It has a slightly different taste and texture but at least it's pasta!We also sometimes use spaghetti squash instead of spaghetti noodles. 4951

Wow - all great ideas! Especially using thin zucchini slices instead of noodles. @FoFa:  That's good, too!  My favorite is butternut squash with a little butter, cinnamon, allspice.I grew up with the long neck yellow and round flattened white squash.  Simply cut up and cook down with onions, a dash of salt, and pepper.  Our favorite back then was squash (or eggplant, mirliton, lima beans, etc) cooked with onions and SHRIMP.YUM
