I have been craving boudin balls and decided to make my own this weekend. I have been doing my research and think I am good to go. If any of y'all make them and have suggestions, please let me know. I will hit the grocery store running after work and make them tomorrow. Found one recipe with a mustard dipping sauce that sounds delish. 4951

I buy my boudin balls (and smoked boudin) from The Best Stop in Scott, LA.I've tried boudin balls at Zacharies, Cafe Rian Cajun Cafe, Fish Tales, and several other local places.  They are OK, but not nearly as good as The Best Stop.  Most put a lot of cayeene pepper in them and don't have the full flavor that a great boudin has. 4951

@SenseOfHumor: I've only made them a few times. They were good, but nothing like I'd get from a restaurant or a real cajun cook. I used cornmeal to bread mine, only because I like my fried catfish that way. Also, mustard is my dip of choice with boudin. Louisiana Hot Sauce is good too. Emoticon

Boudin is a Cajun sausage made from boiled pork and pork liver in a seasoned water.  Then it is ground up with onions, green onions, salt, and other spices.  The ground meat is then mixed with cooked rice and more chopped green onions.  Some of the water from the boil is added to achieve a moist mix.  The final step is to stuff it in casings, which is cleaned hog intestines.  Boudin balls are made by just forming balls instead of stuffing in the casing.  The balls are then coated lightly with a breading, then fried.  DROOL!Edited:  Most people boil the boudin sausage before eating.  I much prefer boudin that has been smoked.  You just heat in a microwave and enjoy! 4951

I've done them a few times, and they're damn good.  I roll them in cornmeal and fry.  Easy peasy.I mix ranch and hot sauce for dipping.  Treebeard's hot sauce.  So yummy.  And now I want to make boudin balls. 4951

Most people boil the boudin sausage before eating.  I much prefer boudin that has been smoked.
 
@Retired_Engineer: I prefer it smoked, but sometimes I'm in a hurry(or the pit's not hot and ready)...Then I use the steamer pot.

We have a 5lb box of boudin balls in the freezer.  I think I'm going to try baking them instead of frying them. 4951

@BBQguy:   Steaming them is better than boiling.  With boiling, you tend to lose some flavor to the water.
