When we used to live in Alief, the Mexican restaurant in that area (some, not all) used to serve this bowl of pickled carrots, onions and jalapenos in chunks (not like a dip or salsa). Good stuff, for sure.In this area I don't recall ever seeing that.Been dying for some.so; 1 - What is that called2 - Anyone know how to make it? 4951

Sounds like giardiniera, but I think that's Italian. Never seen it at a Mexican place, so Emoticon .  4951

Ninfas used to serve those, as well as other authentic local places. More like spicy pickles veggies. Not salsa at all. I'm looking for it on Google. 4951

If you're talking about what I think you're talking about, it's called escabeche.
 
Edited: that's usually used to talk about a fish dish, but could also be used to mean the marinade or vegetables that were used in preparing the dish. 4951

If you're talking about what I'm thinking you are, El Chico (anyone remember them?) used to serve this with the chips upon request (I ate that stuff with a fork when I was a kid! lol). I make this with every Mexican meal I serve. Delicious! You definitely have to let it marinate for at least 24 hrs. It kind of sucks otherwise. Emoticon I cut my onions in "chips" (like 1 " squares) and increase the vinegar (I use white wine vinegar) a little and decrease the water quite a bit.
 
(NOTE: Try to use Mexican oregano if you can.)

@14valentine: Yea, just not the same, I have some I bought this weekend, because of my missing that. But for some reason, it just aint the same.
Some of the more authentic (rather than tex-mexish) in the Alief area had some awesome ones. I would just pick out an onion/carrot/jalapeno and eat it on a chip instead of the salsa. Sometimes I would go through 3 bowls of the stuff in one visit, and the family didn't eat it. 4951

So Mexican Relish they call it, I had a thought in the back of mind it was called something like that.I gots to make me some.My favorite restaurant (not El Chico, but a mom & pop shop)  had the onions done in squares (chips?) and the jalapenos were done in spears instead of rounds. Loved that stuff. 4951

@lola: Not really, at least not that I could find. I found one that picture sort of looks like that, but when you open it, it is all carrots a few jalapeno spears.

When I order my steak and cheese at the Brickhouse on 1960 by the mall. I always get a side of pickled veggies I'll admit it. I give my dh my batting eyelashes and he usually lets me have his.
They are so hood. Not spicy or hot to me. 4951

@BBQguy: I was going to say the same thing.  If you know how to make pickles, it is similar.  You can buy it in the grocery store too, near where they have relish and such.

I like to add fresh onions to my grocery store mix. I do prefer the fresh pickled stuff in restaurants but I'm too lazy to make it at home. Emoticon 4951
