When we used to live in Alief, the Mexican restaurant in that area (some, not all) used to serve this bowl of pickled carrots, onions and jalapenos in chunks (not like a dip or salsa). If you're talking about what I'm thinking you are, El Chico (anyone remember them?) used to serve this with the chips upon request (I ate that stuff with a fork when I was a kid! lol). I make this with every Mexican meal I serve. Delicious! You definitely have to let it marinate for at least 24 hrs. It kind of sucks otherwise.
I cut my onions in "chips" (like 1 " squares) and increase the vinegar (I use white wine vinegar) a little and decrease the water quite a bit.
(NOTE: Try to use Mexican oregano if you can.)
