I bought the attachment for the Kitchen Aid stand mixer to grind grain. So far, I have made my own corn muffins, corn tortillas and grits from grinding my own corn. All of it taste amazing, nothing like anything in the store.Recently, I bought wheat and have attempted to make bread with it by grinding.Had some mishaps, but each time I get closer. I think I got it this time though, I was not adding dough enhancer which softens the dough and I also learned about the window method. The window method determines when the dough is ready to be put in the pan to rise. You take a small piece of dough and make a square, roughly 2X2 in and it should look like a square without any holes. I'm going to make another attempt this week. If I'm successful I will put the steps I used on here. 4951
So the attachments are worth it? I've been thinking of getting them, but wasn't sure if it would be worth spending the extra money. I know the pasta ones have been a huge help! Making ravioli by hand was a giant pain in the butt lol. 4951
Yes, it works. Trick is to keep whatever you are grinding in the freezer. It keeps the grinding process cooler. Skipping that step, it still works but you have to slow down. It will get too hot and you have to let it cool down. It's also very loud, really need ear plugs to be honest. It reminds me of when I was in the Marines on the flight line and the sound of a jet engine, not good for your hearing for sure. It also makes a lot of dust. I fixed that issue by taking an old butcher board I found in the attic and cutting it to the shape of the attachment dispenser and container it goes into. Perfect. No more dust. Cool! Thanks for the tips. I may PM you for more advice when I finally break down and buy one, if that's okay. I've made bread before and loved it, but never completely from scratch and grinding my own wheat. I'm looking forward to that! 4951
I'll post my results here. I will make awesome 100% wheat bread, nothing stops a determined former Marine. Doing this stuff, you have to figure things out, like all the dust it created...and engineering solutions to those issues. I have yet to find anyone who solved this problem but myself. It can be done but it's a learning process. My plan is to have this mission accomplished by Saturday. We will see...  4951
