I was in an island state of Master Chef mind, and decided to throw down a lil' Caribbean Jerk Chicken, beautifully seasoned Black Bean action, and simple sticky Rice on the side to complete this perfectly lovely meal.....  For the Caribbean Jerk Chicken, I used very thin Chicken Breasts (think Milanese style) that I marinated all day in K.C. Masterpiece Caribbean Jerk Marinade, and then grilled off in my trusty grill pan... And for the Black Beans, I simply used a can of Organic Black Beans, beautifully seasoned up with half a teaspoon of Garlic Powder, Cumin, Paprika, Cayenne Pepper, and the usual, salt and pepper... Side Note: I actually allow the Black Beans to simmer for about 10-15 minutes, then using an old school hand help masher, I mash up the beans, allow to simmer for an additional 5 minutes, remove from heat, and allow to sit with the lid off (to thicken) for 5 additional minutes before serving (and thoroughly enjoying!)  Served along side of simply perfect sticky Rice.....   And.....
