Use bacon grease instead of butter to brown the bread. OMG!!
 
Or...use some left over chicken, mix in some buffalo sauce. Thin out some blue cheese with a touch of milk or yogurt. Spread the cheese on the bread, top with chicken, then a piece of jack cheese. Butter the outsides and throw in the pan. Oh Lord yes!! 4951

take 2 slices of bread , butter the outsides & lay one slice butter side down in the skillet, then  place a slice of your favorite cheese on the bread top this with a slice of tomato & another slice of cheese on top of the tomato & then put the last slice of bread on top butter side out . When the bottom slice of bread is brown , flip sandwich over & brown the other slice of bread. Be careful when eating this because the tomato will be very HOT ! You can also use a slice of sweet onion in place of the tomato , either way it's delicious but the tomato is my all time favorite ! 4951

I actually had quite a lovely lunch today, if I say so myself...  I grilled up a piece of Ciabatta bread,  then I layered a slice of Boar's Head Baby Swiss Cheese on each side, some grilled Button Shrooms, and some fresh Baby Spinach...  Then, I placed it back on my trusty Grill Pan, toasted up both sides of my sammich, and let the cheese get all melty....   Perfection....

Growing up, the only thing I new how to "cook" for myself is grilled cheese.  It also meant it was time for another grocery store trip and it was slim pickings in the freezer and not much left but cereal, PB&J, etc.  Not great choices for a picky-eating kid. So, please forgive me when I don't get terribly excited about grilled cheese, no matter how much you dress and fancy it up.  I know countless people love it, but to me, it just represents very close to last resort of food choices.  I just can't imagine going out and ordering grilled cheese, unless you are trying to pacify a toddler.  4951

@donnatella: Please forgive you?  How can you be forgiven for having personal food preferences different than my own?Maybe this is what my ex coworker was talking about when she told me I had "an unrefined palate".

I've always loved grilled cheese sandwiches w/ Campbell's tomato soup.  Then I discovered how to make homemade tomato soup. Oh my..it's so much better and only takes a few minutes.  Voila!  Heaven in your mouth.Footnote:  my DH just read this morning about how to make a to-die-for grilled cheese.  Use mayo instead of butter on the 'grilled' side of each artisan bread slice.  We tried it but used sandwich bread since it's all we had.  Soggy! 4951

I like @taramay idea about using bacon grease on the bread instead of the butter. I'm definitely going to try that one. I've used the mayo but I, personally, like butter better. I usually use several kinds of cheese, but basically I've never met a grilled cheese sandwich I didn't like!! I even made America's Test Kitchen's Grown-up Grilled Cheese recently... VERY good, but quite the process!!  Emoticon 4951
