I just put on a pot of homemade tomato sauce. Tonight is going to be Eggplant Roll-ups (kind of like individual eggplant parm), Thursday we will use the sauce again and have homemade pizza, haven't decided on fun pizza topping yet so we are open for suggestions on that front! Taking a break from Italian Friday and Saturday, but Sunday will likely be spaghetti and meatballs. Then we'll freeze some sauce and can the rest! Make sauce about once a month, it's great to always have some in reserve for a quick "oh **** its dinner time? Ugh, I didn't plan/cook anything...Looks like Italian!"Â
