Is his meat well trimmed? When you sample it and observe a bit more fat than you were expecting, does he inform you that good marbling is just a sign of meat quality?

You are pretty new so I will overlook this question . I can't even pretend to turn fatty bloody meat into anything vaguely sexual because it grosses me out and I can turn almost anything that way.
I dont do marbling..I only eat white meat chicken or turkey..steak is burnt for me and NO fat and no pork.
