@foxymama: I'd be happy to..That'll help me get it seasoned quicker. I'll need to put as much meat through it as I can this next week.

Have you smoked a turkey before? What meats do you normally smoke? Ribs, brisket, pork butt?
 
@foxymama: Yes...MANY of them! I prefer to just do boneless turkey breasts & the legs separately, because(IMO) those are the best 2 parts of the turkey. They're also best when cooked at different temps/methods. 
I cook just about anything you can think of really...Including all of the ones you mentioned. I do a lot of pork butts and briskets. Ribs are less common, but I have a standing date twice a year where I cook 50-60 slabs for a club. Chicken(in just about any form) has become a very popular item..Especially with the price of beef being so high. Speaking of "cook just about anything", hurricane Ike(albeit a crappy experience) was a great time to be my neighbor. Emoticon With the power out for 2 weeks, everyone had food that had to be cooked or thrown out. My pit ran nonstop for most of that time. Some of the oddball items were frozen pizza & desserts, cinnamon rolls & biscuits, ravioli, tv dinners, and lots of canned vegetables & soups. Emoticon  4951
