With so many on health kicks right now, I assume eggs are a big part of the low carb "diets."
 
How do you like your eggs? I'm reminded of the scene in Runaway Bride where she was trying all the different eggs to see which ones she liked because she always just ordered whatever her fianc� ordered.
 
I discovered through lots of low carb dieting that I don't like eggs with cheese very often. I prefer my eggs with tangy flavors, like deviled with lots of mustard. My favorite is egg whites scrambled with spinach and topped with hollandaise sauce.
 
Also I am OCD about the umbilical cord. I have to remove it before I cook the egg or add it to a recipe. 4951

I whip them up, put a good dollop of light margarine in the pan and let them cook, adding salt at the very end. I don't mess with them up too much and let them do their own thing. I cook them until all of the runny is gone but BEFORE they start to brown. Big fluffy scrambled eggs are the result 4951

@Mahm: You must mean that stringy white stuff beside the yolk of an egg. That's not an umbilical cord. What you see is called the chalazae. Chalazae are strong protein strands designed to hold the yolk of the egg centered in the albumen (egg white). The chalazae in a real fresh egg are quite noticeable. They shrink or disappear as the egg ages in the shell. There is no umbilical need for avians (birds) since they are ovipositors. Egg layers have no need for umbilical cords as development takes place in a separate closed environment from the mother.

I love mine fried, little butter to grease the pan (adds more flavor than you can image).When the bottom gets half way cooked, put a tablespoon of water in there, cover immediately with foil, let cook for about minute, until the whites are cooked, and remove and eat.Season before the water bit. 4951

I still don't like the texture (or the weirdness) of it. I notice it, whether the egg is scrambled or fried. 4951

Over medium. DH can't seem to master this. Runny yolk, NO runny white. I have to make my own eggs. And they MUST be organic free range.
 
I also have to make my own bacon. He makes either floppy bacon or completely burned bacon. Yuck!
 
I honestly think he pretends to not know how to cook a breakfast I like just so I have to make his breakfast for him. Haha! 4951
