We do backstrap like chicken fried steak. Add some mashed potatoes and cream gravy. OMG!

I used to after soaking it in buttermilk but now I will only fry it like that for his birthday..now I just make it into a gravy with rice.
@BooBear: I soak mine in red wine or beer but I have done buttermilk before but I did not get the desired taste. I might have to try it again.
