Just made this it's so yummy and healthy.
Turkey, Vegetable with Kale soup
Lots of leftover Turkey, chopped
1 whole Large Onion, Diced
2 stalks Celery, Diced
3 cloves Garlic, Minced
6 cups Chicken stock or homemade turkey stock
1 whole Red Bell Pepper, Seeded And Diced
1 whole Green Bell Pepper, Seeded And Diced
1 jalapeño, seeded and chopped
4 whole Carrots, Peeled And Sliced On The Diagonal
1 cup frozen peas
1 cup frozen corn
Kale from garden, remove stems, wash and course chop
Kosher Salt To Taste
Black Pepper To Taste
In a large pot over medium-high heat, saute the onion, celery, peppers and garlic. Add carrots and stock. Bring to a boil then add peas, corn and turkey.
Stir to combine,then bring to a boil. Reduce the heat, then cover the pot and simmer the soup for 15minutes. Add Kale then simmer for 10 minutes.
