I'm going to play around with some veggie burger recipes the next few days, but I have question first: Are eggs ok?? They're one of the best binders for meatloaf or burgers. I know there are several levels of Vegetarians, but I need a percentage here. Is it better to just not use any eggs at all and choose another route from the get-go, or are the majority of veggie burger fans ok with cackle fruit? Also, where does milk fall in the pecking order? And is there any other ingredients that I may think are ok, but are a no-no for faux burger eaters?? 4951

It it's Vegan, no, vegans do not do any dairy products or meat of any kind.  I was vegetarian for 4 years and I had dairy, a lot of vegetarians still consume dairy.  4951

I saw a vegan burger being made on Diners, Drive-ins & Dives that looked really yummy. And you can tell when Guy really likes something. They cooked the tofu first, with a pan weighing down the top, until it was brown and chewy and dry, then chopped it up and added the other ingredients. I don't recall what they used to bind it though. 4951

I'm remembering now that milled flax can be used as an egg substitute in baking. Ground chia seeds are more gelatinous, but more expensive. 4951

@topcat: Emoticon I'm here! It's me! Emoticon I think the challenge will be good for me. I'm not going to eat them, mind you..but having them in my repertoire might be profitable. Ya' never know when someone might ask for them at an event. A fellow BBQ buddy of mine just did a bunch of them for a graduation party last month in PA. He just bought the frozen kind, but the customers were more than pleased. He did think of something after the fact though...They were prepared on the same cooking grates where many an animal patty/roast/filet had been seared for others. Emoticon  4951

Some are VERY good.  My wife and I used to go to many different vegetarian/vegan restaurants arount NY when we lived there and have many delicious dishes... 4951
